Mango Shrimp with Sweet Potato Mash: A Flavor-Packed Summer Hit

Y’all. This Mango Shrimp recipe came out of a whole misunderstanding, but let me tell you—sometimes the best things come from happy accidents.


What started as me playing around with summer ingredients turned into a juicy, sticky, finger-lickin’ shrimp dish that I can’t stop making. It’s got layers of flavor, sweetness from fresh mango, a hit of wine (don’t worry, most of it cooks out), and a smoky, slightly tropical BBQ sauce that coats each shrimp just right.


The best part? That buttery sweet potato mash it’s served on. Whew.


Let’s Talk About This Sauce


The magic starts with a homemade mango BBQ sauce. You’re basically building it like any good sauce—something tangy, something sweet, something deep and earthy. Here’s what goes in:

• Tomato paste

• Fresh mango (ripe and juicy!)

• Stella Rosa Tropical Mango (or whatever sweet white wine you have on hand)

• My Rojo seasoning blend (you can grab this from my YouTube video, link below!)

• Brown sugar

• Mustard powder

• Honey


Simmer that down until it’s thick and glossy—it smells so good, y’all. Sticky, fruity, smoky, and just a little tangy.



Now Let’s Get Into the Shrimp


While the sauce is coming together, go ahead and get your shrimp seasoned and sautéed. I like to use:

• A little olive oil

• A spoonful of mango purée

• Green onion

• Garlic

• Chopped cilantro

• A pinch of salt (but not too much—the sauce will bring the flavor!)


You’re not drowning the shrimp—just giving it some aromatics so it shines on its own before joining the sauce party.

Full Recipe


Mango BBQ Sauce

  • 2 tosp tomato paste

  • 1 ripe mango, diced

  • 1/2 cup Stella Rosa Tropical Mango (or sweet white wine)

  • 1 tbsp Rojo seasoning (see YouTube video)

  • 2 tbsp brown sugar

  • 1/2 tsp mustard powder

  • I tbsp honey

Shrimp Mixture

  • 1 lb shrimp, peeled and deveined

  • 1 tbsp olive oil

  • 2 tbsp mango purée

  • 2 green onions, sliced

  • 2 garlic cloves, minced

  • 2 tbsp chopped cilantro

  • Pinch of salt

Sweet Potato Mash

  • 2 medium sweet potatoes, cooked and mashed

  • 1 tbsp butter

Instructions


  1. In a saucepan, combine tomato paste, puréed mango, wine, Rojo seasoning, brown sugar, mustard powder, and honey.

  2. Simmer on low heat until thickened into a glossy sauce.

Set aside.

  1. In a skillet, heat olive oil and sauté green onion and garlic.

  2. Add shrimp, mango purée, cilantro, and salt. Cook until shrimp are pink and fully cooked

  3. In a separate pot, mash cooked sweet potatoes with butter

  4. Toss the cooked shrimp in the mango BBQ sauce until coated.

  5. To plate: scoop sweet potato mash onto a plate, top with mango BBQ shrimp, and garnish with fresh cilantro and green onion



Time to Plate


This is where it all comes together.


I like to serve my Mango Shrimp over a bed of whipped sweet potato. I just roast or boil mine, mash it with a little butter, and that’s it. No extra sugar needed—it balances out the tang of the shrimp perfectly.


Once your shrimp is done and coated in that luscious mango BBQ sauce, pile it right on top of the sweet potato mash. Finish with some raw green onion, chopped cilantro, and maybe a squeeze of lime if you’re feelin’ fancy.
