I went back to the kitchen laboratory (also known as my cozy home kitchen) and started experimenting. The goal was clear: create a yeast-based braided bread recipe that anyone could make, even if they’ve never touched sourdough, and share it here on Naava’s Nourishing Garden. I swapped wild yeast for instant yeast, adjusted the rise times, and tested batch after batch. The result? A golden, soft, and absolutely delicious braided bread that tastes just as comforting as the original, but can be made in a fraction of the time.

Yeast-Based Braided Bread Recipe
This yeast-based braided bread recipe yields one lovely loaf. It’s perfect for family dinners, holiday gatherings, or just a cozy weekend treat. And yes, it’s 100% approved by my preservative-sensitive daughter!
Ingredients:
• 1 cup warm water/milk (about 110°F/43°C)
• 2 1/4 teaspoons active dry yeast (1 packet)
• 2 tablespoons sugar (you can sub honey for a more natural sweetener)
• 2 more Tablespoons sugar /honey to add to the flour to make it brioche (optional)
• 3 1/2 cups all-purpose flour (plus extra as needed)
• 1 1/2 teaspoons salt
• 4 to 8 tablespoons of unsalted butter (or or a neutral oil)
• 2 large egg (at room temperature)
• 1 egg (beaten, for egg wash on the braid, optional)
Instructions:
1. Proof the yeast: In a large mixing bowl, combine the warm water, yeast, and sugar. Stir gently and let it sit for about 5-10 minutes until it becomes foamy. This means your yeast is alive and ready to work. (If using instant yeast, you can skip the proofing and mix everything straight away, but I personally love seeing the yeast foam—it never gets old!)
2. Mix the dough: Add the all-purpose flour, salt, sugar,knead the butter into the mixture then add the room-temperature eggs slightly beaten and the yeast mixture into the flour mixture . Stir everything together until a shaggy dough forms. If it’s very sticky,a bit more flour a tablespoon at a time. Keep in mind this is a softer dough.
3. Knead: Transfer the dough to a lightly floured or oiled surface (or use a stand mixer with a dough hook). Knead by hand for about 8-10 minutes (or 5 minutes in the mixer) until the dough is smooth and elastic. It should be soft and a little tacky but not sticking heavily to your hands. (Feel free to add a sprinkle of flour if needed as you knead, but try not to add too much to keep the bread soft.)
4. First rise: Form the dough into a ball and place it in a lightly oiled bowl. Cover the bowl with a damp cloth or plastic wrap and let the dough rise in a warm place for about 1 hour, or until doubled in size. (Tip: I before I got my oven with the proof feature, I often put it in my oven turned off but with the oven light on – it creates a perfect warm environment.)
5. Shape the braid: Gently punch down the risen dough to release excess gas and turn it out onto a lightly floured surface. Divide the dough into three equal pieces. Roll each piece into a rope about 12-16 inches long. Line up the three dough ropes side by side on a parchment-lined baking sheet. Pinch the top ends together, then braid the ropes by crossing them over each other (just like braiding hair). When you reach the end, pinch the bottom ends together to seal the braid. Tuck the ends under slightly for a neat look.
6. Second rise: Cover the braided loaf loosely with a towel and let it rise again for about 30-45 minutes, or until it’s puffy and noticeably larger. During this time, preheat your oven to 350°F (175°C).
7. Egg wash and bake: If using the egg wash, gently brush the beaten egg over the top of the braid. This will give the bread a beautiful golden shine. Bake the bread in the preheated oven for about 25-30 minutes, or until the loaf is golden brown and sounds hollow when you tap the bottom. (Every oven is a bit different, so keep an eye on it towards the end. In my oven, 28 minutes is the sweet spot.)
8. Cool and enjoy: Remove the braided bread from the oven and let it cool in the pan for 5 minutes and remove promptly to cool on a wire rack completely before slicing (this is the hardest part – the bread smells so good, everyone just wants to tear into it!). Then slice, serve, and enjoy the fruits of your labor.
This bread is wonderful plain, with a pat of butter, or dunked in your favorite soup. My family also loves it for sandwiches.
