• 1 cup sugar
• ½ cup butter (1 stick), room temperature
• 2 large eggs, room temperature
• 1 tbsp lemon zest
• 1 tbsp lemon extract
• Pinch of salt
• ½ cup evaporated milk (Pet Milk)
• 1½ cups bread flour + 1 to 2 tbsp extra
• 1 tsp baking powder
• 1 cup whole fresh blueberries, washed and coated in flour
Instructions:
1. Prep the Blueberries: Start by washing your blueberries and coating them with 1-2 tablespoons of flour to keep them from sinking in the batter. Set them aside.
2. Preheat the Oven: Heat your oven to 350°F (175°C). Line your muffin tins with wax paper or your preferred liners.
3. Combine Dry Ingredients: In a large mixing bowl, sift together the flour, baking powder, and salt.
4. Incorporate the Butter: Mix room-temperature butter into the dry ingredients until you get a crumbly texture.
5. Prepare Wet Ingredients: In a separate bowl, whisk together sugar, eggs, lemon zest, lemon extract, and evaporated milk until fully combined.
